What's the difference between brown and golden linseeds?
Both are flaxseeds from the same plant and differ mainly in colour. They have a very similar nutty flavour, although golden linseeds are a touch milder and blend in better in pale bakes.
How do I make almond or cashew milk?
Soak a cup of almonds overnight (cashews only need a few hours), drain, then blend with around four cups of fresh water. Strain through the Nut Milk Bag, keep the milk in the fridge and use it within three to four days.
Do I need to rinse quinoa before cooking?
It's worth it. Quinoa has a natural coating called saponin that can taste bitter or soapy, so give it a good rinse in a fine sieve before simmering.
What are de-shelled hemp seeds like?
They're the soft inner part of the hemp seed with the crunchy shell removed. They have a mild, nutty taste and need no cooking, so just sprinkle them over salads, porridge or smoothie bowls.
How do I use bee pollen?
Sprinkle a small spoonful over yoghurt, granola or smoothie bowls for a floral, slightly sweet taste and a little crunch. As a bee product it isn't suitable for vegans or anyone allergic to pollen or bee products.
How should I store nuts to keep them fresh?
Keep them airtight in a cool, dark cupboard, and move walnuts, pecans and pine nuts to the fridge as they turn rancid fastest. Most nuts can also be frozen for several months.
