Why are my mung bean sprouts thinner than shop-bought ones?
Commercial sprouts are grown under weight in the dark. Home-grown sprouts are thinner but just as crunchy. Keeping the jar dark and well rinsed helps.
How long do mung bean sprouts take?
About 3–5 days from soaking, depending on how long you like them.
How many beans should I use?
About 4 tablespoons (around 60g) for a 1-litre jar. They grow to several times their size.
How do I use them?
They're a classic in stir-fries, pad thai, noodle soups and spring rolls. Add them at the end of cooking so they stay crisp.
Should I cook sprouts before eating them?
Yes. The Food Standards Agency advises cooking sprouted seeds until they're steaming hot all the way through, unless they're sold as ready to eat. Home-grown sprouts aren't, so cook them before eating.
Is it suitable for vegans?
Yes.
How should I store the seeds?
Keep them sealed in a cool, dry place away from sunlight, and reseal the pouch after opening.
